Join us for a journey of craftsmanship – from ‘farm to table’, Japan’s Minabe to Hong Kong.
Known as Japan’s number one producer of Nanko-ume, the town of Minabe in the Wakayama Prefecture is home to a longstanding tradition of exquisite household umeshu produced with ume in family farms.
Ryo Takada, the third generation of a farming family in Minabe, grew up in Tokyo and enjoyed life in Tokyo unrelated to farming. He was inspired by Minabe’s ume-farming culture and heritage to start building Minabe Craft Umeshu with his team in 2021. Through bestowing Minabe’s local traditions and passing down the culture of umeshu, young brewers will emerge and those supporting the industry will grow.
In this special event. Ryo will be bringing the Minabe Craft Umeshu 1-10 selection to Hong Kong. Minabe Craft Umeshu is a liqueur made from three ingredients: Nanko-ume from their farms, base alcohol, and sugar. Depending on the ingredients and the family recipe, unique craft umeshu with a completely different taste and alcohol content can be produced.
Joe, co-founder and head chef of local restaurant Nutmad, will also create four unique dishes inspired by umeshu and Hong Kong flavours. Join us to savor the myriad tastes of umeshu, and enjoy stories about the extraordinary craft of Japanese umeshu-making.
